5Senses | Shichimi Togarashi Seasoned Noodles
Ingredients
200 g ramen noodles
3 cups water
For the Togarashi Blend:
1 tbsp dried orange peel powder
1 tbsp nori flakes
1 tsp ground ginger
1 tsp Japanese chili flakes
½ tsp Sichuan pepper
1 tbsp black sesame seeds
1 tbsp white sesame seeds
½ tsp 5Senses Ghost pepper Whole (lightly crushed)
For the Sauce:
1 tbsp oil
2 garlic cloves (minced)
1 tsp sugar
1 tsp soy sauce
2 tbsp reserved noodle water
For Garnish:
Sesame seeds
Spring onions (chopped)
Salt (to taste)
Directions
Prepare the spice base
Using a mortar and pestle, lightly crush the 5Senses Ghost pepper Whole. In a small bowl, combine it with dried orange peel powder, nori flakes, ground ginger, Japanese chili flakes, Sichuan pepper, black sesame seeds, and white sesame seeds. Mix well and set aside.Cook the noodles
Bring 3 cups of water to a boil in a saucepan. Add ramen noodles and cook until 90% done. Reserve about 2 tablespoons of the noodle water, then drain and set aside.Prepare the sauce
Heat oil in a pan over medium heat. Add minced garlic and sauté until lightly golden. Stir in sugar, soy sauce, and reserved noodle water. Cook for about 1 minute until slightly combined.Combine and toss
Add the cooked noodles to the pan. Sprinkle in 1½ teaspoons of the Sichuan Togarashi blend. Toss everything on high heat for about 1 minute, mixing thoroughly to ensure the noodles are evenly coated.Finish and serve
Transfer to a serving bowl. Garnish with sesame seeds, chopped spring onions, and a pinch of salt if needed.
