5Senses | Toasted Nuts & Spice Mix
Ingredients
Homemade 5Senses Spice Premix 1 tbsp
Cumin powder – 1 teaspoon
Coriander powder – 1 teaspoon
Cayenne – ½ teaspoon
Garlic powder – ½ teaspoon
Butter – 75 grams
Salt – ½ teaspoon
Pepitas – ½ cup
Almonds – ½ cup
Peanuts – ½ cup
Walnuts – ½ cup
Cashew nuts – ½ cup
For Spice Premix
5Senses black pepper whole – 1 teaspoon
5Senses green cardamom whole – 4 pods
5Senses nutmeg whole – ½ piece
5Senses wild cinnamon bark – 1 small stick
5Senses cloves whole – 7 to 10 pieces
Directions
1. Add 5Senses black pepper, 5Senses green cardamom, 5Senses nutmeg, 5Senses wild cinnamon bark, and 5Senses cloves to a mortar. Grind to a fine powder.
2. Measure one tablespoon of this 5Senses spice mix and set aside.
3. Place a pan on low heat. Add one tablespoon of the prepared 5Senses spice mix, cumin powder, coriander powder, cayenne, and garlic powder. Toast lightly until fragrant.
4. Add butter and let it melt on low flame. Stir well to release the aroma. Add salt and mix. Allow it to gently simmer; do not overcook. Remove from heat.
5. In a baking tray, combine pepitas, almonds, peanuts, walnuts, and cashew nuts. Pour the spiced butter over the nuts and mix until evenly coated.
6. Bake at 180°C for 45 minutes, stirring occasionally for even roasting.
